Apple Pie

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 3/4 cup shortening
  • 4 tablespoons cold water
  • FILLING:
  • 7 cups thinly sliced peeled baking apples
  • 2 tablespoons lemon juice
  • 1 cup sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons butter or margarine
  • 1 egg yolk
  • 1 tablespoon water

Directions

  1. In a bowl, combine flour and salt; cut in shortening. Gradually add cold water, 1 tablespoon at a time, tossing lightly with a fork until dough forms a ball. Chill for 30 minutes. On a floured surface, roll half of dough into 10-in. circle. Place into a 9-in. pie pan.
  2. In a bowl, toss apples with lemon juice. Combine sugar, flour, cinnamon, salt and nutmeg; add to apples and toss. Pour into crust; dot with butter. Roll out remaining pastry to fit top of pie; cut slits in top. Place over filling; seal and flute edges. Beat egg yolk and water; brush over pastry. Bake at 425 degrees F for 15 minutes. Reduce heat to 350 degrees F; bake 40-45 minutes more or until crust is golden and filling is bubbly.

Blueberry Pie

Ingredients

  • 3/4 cup white sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 4 cups fresh blueberries
  • 1 recipe pastry for a 9 inch double crust pie
  • 1 tablespoon butter

Directions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Mix sugar, cornstarch, salt, and cinnamon, and sprinkle over blueberries.
  3. Line pie dish with one pie crust. Pour berry mixture into the crust, and dot with butter. Cut remaining pastry into 1/2 - 3/4 inch wide strips, and make lattice top. Crimp and flute edges.

Lemon Meringue Pie

Ingredients

  • 1 cup white sugar
  • 2 tablespoons all-purpose flour
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 2 lemons, juiced and zested
  • 2 tablespoons butter
  • 4 egg yolks, beaten
  • 1 (9 inch) pie crust, baked

  3. To Make Meringue: In a large glass or metal bowl, whip egg whites until foamy. Add sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust.
  4. Bake in preheated oven for 10 minutes, or until meringue is golden brown.

Strawberry Pie

Ingredients

  • 1 (9 inch) unbaked pastry shell
  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 (3 ounce) package strawberry gelatin
  • 4 cups sliced fresh strawberries
  • fresh mint

Directions

  1. Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450 degrees F for 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack.

Caramel Apple Pie

Ingredients

  • 1 recipe pastry for a 9 inch double crust deep dish pie
  • 3/4 cup white sugar
  • 3 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 6 cups thinly sliced apples
  • 1/2 cup caramel ice cream topping

Directions

  • 1 pound skinless, boneless chicken breast halves - cubed

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup white sugar

  • 5 bananas
  • 1 (3 ounce) package cream cheese, softened

  • 1 (9 inch) unbaked pie shell
  • 3/4 cup sugar
  • 2 cups chopped carrots
  • 2 eggs
  • 1 teaspoon ground cinnamon

Peanut Butter Pie

Ingredients

  • 1 (9 inch) prepared graham cracker crust
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup confectioners' sugar
  • 1 (16 ounce) container frozen whipped topping, thawed
  • 15 miniature chocolate covered peanut butter cups, unwrapped

Directions
